One time when I came across some talk show the other day, and they talked about healthy substitutes in baking. Intrigued, I later did some research online and discovered that it is not necessary to add oil and eggs to a cake mix to add still a good cake or cupcakes. On the TV show, replaces a cup of pumpkin for the oil and eggs in a chocolate cake mix. Eliminating the use of oil and eggs greatly cut down the portions calories.
I picked up a yellow cake mix and eggs, and replaced the oil with pureed carrot, apple and orange peel. The result was a beautiful orange cake with a moist crumb and a good score. I covered by a thin lemon / orange glaze.
Knowing the frequent hunger pains in my family, I also have a chocolate cake mix with canned beans Garbonzo! I also cinnamon and 1/4 cup unsweetened cocoa powder. It was dipped in a chocolate / orange glaze. I have no complaints, even after they learned the secret ingredient! In fact, they turned to the cupcakes Garbonzo beans are the favorite!
